Ube Pancakes

This dish is special to me because it’s fluffy and I like the color purple. I like to eat it for breakfast with milk.

Ingredients:

1 packube flavored hotcake mix
2 tbspoil or margarine, melted
2/3 cupwater or milk
1egg

Instructions:

  1. Combine one pack of Ube flavored hotcake mix, milk or water, oil, and egg in a medium bowl, and mix until fairly smooth
  2. Pour about ¼ cup batter onto a preheated, slightly greased griddle or pan
  3. Cook for about 1 minute until the top is bubbly, and flip over
  4. Enjoy!
