Sardines and Long Rice
Linda Inouye grew up watching her Mom, Nora Acoba, cook many wonderful Filipino dishes – using fresh vegetables from her garden. Linda refers to this particular dish as “peasant food,” as the ingredients are simple and inexpensive. Nonetheless, it is delicious and nutritious!
Ingredients:
1 pkg | long rice – 7.75 oz |
2 cans | sardines in tomato sauce - 15 oz. - California Girl, preferred brand |
½ | round onion |
2 cloves | garlic, minced |
3 tbs | oil |
2 tbs | patio, or fish sauce |
5 cups | water |
Instructions:
- Soak long rice in water one hour before cooking, then cut in thirds with kitchen shears
- Heat oil in a large pot
- Add garlic and onion to pot – stir often – until aromatic and golden brown
- Add water and bring to a boil
- Add patis, followed by the long rice
- Lower heat and add sardines with tomato sauce
- Stir gently to keep sardines from breaking apart and to prevent long rice from sticking to the pot
- Dish is complete when long rice is transparent and has absorbed most of the liquid
