Portuguese Bean Soup
Bruce Jacintho learned how to cook by watching his mom. Along with homemade bread, soups were made often because it fed a lot of people. Although the recipe has changed a little over the years, Bruce continues to make his mom's Portuguese Bean Soup for the family. Of course, our favorite ingredient is Bruce's watercress!
Ingredients:
1 | ham shank |
15 oz. can | tomato sauce |
15 oz. can | kidney beans |
1 | potato, cubed |
1 ½ cup | elbow macaroni |
1 bunch | watercress |
Instructions:
- Boil ham shank for 1 hour
- Let cool, then shred meat from bone
- Add water – enough to cover shank
- Add tomato sauce, kidney beans and cut potatoes
- Bring to a boil then add elbow macaroni
- Once the macaroni is cooked, add the watercress
- Stir, cover, then turn off the heat
