Keifer remembers having pop overs at a family friend’s cabin in Koke’e. His mom came home and tried a bunch of recipes and even bought special pop over tins because she loved them so much. This recipe is a melding of different recipes and Keifer said his mom's pop overs "tastes the best!"


Ingredients:

3eggs
1 1/2 cupsall-purpose flour
1 1/2 cupswhole milk
1 tspcoarse salt
1 tbspbutter, melted
light sprinklepumpkin pie spice or cinnamon

Instructions:

  1. Heat oven to 450 degrees
  2. Warm milk and eggs to room temperature
  3. Place pop over tin or muffin pan in oven to preheat
  4. Mix eggs, milk and melted butter with a whisk
  5. Add flour, salt and pumpkin pie spice
  6. Remove pan from oven, place some butter or oil in each cup
  7. Fill cups ¾ full
  8. Bake for 15-20 minutes
  9. Decrease oven temperature to 350 degrees and bake for another 15 minutes
  10. Do not open oven until time is done
  11. Serve warm with butter and guava jam
