Pear Cheesecake
This recipe was taken from Kōloa Elementary School’s 1987 Staff Cookbook. It originates from Frances Gandingan, who was a lunch supervisor at the time. To this day, it is still a hit.
Ingredients:
Crust:
1 cup | butter (softened but not melted) |
½ tsp | vanilla |
⅔ cup | sugar |
1 - ½ cup | flour (sifted) |
1 - ¼ cup | chopped walnuts (optional) |
Filling:
2 - 8 oz | cream cheese (softened) |
2 | large eggs |
½ cup | sugar |
1 tsp | vanilla |
Topping:
1 large can | Bartlett Pears |
2 tbsp | cinnamon |
2 tbsp | sugar |
Instructions:
- Preheat oven to 325 degrees
- Crust: Mix together, press into 9 x 13 pan, and bake for 15 minutes
- Filling: Beat ingredients until smooth. Pour on to cooked crust
- Topping: Drain, slice and arrange pear on top of cream mixture. Sprinkle mixture of cinnamon and sugar over top. Bake at 325 degrees for 25 minutes
- Cut into squares when cool
- Refrigerate
