Mochi Pancakes

Mommy and me started making Mochi pancakes while we were home during COVID because I like Mochi and I like pancakes. Mommy found a pancake recipe and added in mochiko for a different flavor. We like experimenting with the pancakes by adding in different things like sprinkles, chocolate chips, and strawberries. My favorite topping is butter, whipped cream, with sprinkles on top!


Ingredients:

1 cupmochiko rice flour
3/4 cupall-purpose flour
1 tbspbaking powder
pinchsalt
1/4 cupsugar
1 cupwhole milk
1 tbspvanilla extract
1 largeegg
3 tbspbutter, melted and cooled

Instructions:

  1. In a large bowl sift together mochiko, flour, baking powder, salt, and sugar
  2. Make a well in the center and add in the milk, vanilla extract, egg, and melted butter. Whisk until smooth -- do not over mix.
  3. Heat a griddle or large frying pan over medium heat. Add a little butter, oil, or cooking spray.
  4. Pour batter on to hot pan and cook until bubbles appear on the surface. Flip with spatula and cook on the other side.
  5. Serve warm with butter, maple syrup, whipped cream, or your favorite toppings!
