Kale Pasta
Ingredients:
1 pound | short pasta -- like fusilli, rotini, penne |
1 bunch | kale, stems removed and chopped |
1 tbsp | olive oil |
1 tray | sweet Italian sausage, crumbled |
1/2 tsp | minced garlic |
1 tsp | red pepper flakes |
12-15 | cherry or grape tomatoes |
1/2 cup | parmesan cheese |
Instructions:
- Boil salted water for pasta, cook until al dente, keep one cup of the water before draining
- Blanch kale and set aside
- Heat olive oil over medium heat, add sausage, and add garlic and red pepper flakes
- Add kale and cook for 2-3 minutes
- Add tomatoes and cook until they soften
- Add pasta, pasta water, and parmesan cheese
