Calamansi Bars
Ingredients:
Crust:
1 cup | butter |
1/2 cup | confectioners sugar |
2 tsp | lemon zest |
1-3/4 cup | all-purpose flour |
1/4 tsp | salt |
Filling:
4 | eggs |
1-1/2 cup | sugar |
1/3 cup | flour |
1/2 tsp | baking powder |
1/3 cup | lemon juice |
2/3 cup | calamansi juice |
2 tsp | lemon zest |
Instructions:
- Preheat oven to 350 degrees
- Cream butter and sugar. In a separate bowl, combine flour and salt. Gradually add into the creamed mixture.
- Press into a greased 13 x 9 pan. Bake 15 minutes until lightly brown.
- Beat eggs and sugar
- In a separate bowl, combine flour and baking powder. Gradually add into egg mixture.
- Stir in lemon juice, calamansi juice, and zest. Beat until frothy.
- Pour over hot crust
- Bake 20-25 minutes, or until golden brown. Cool on wire rack. Dust with confectioner’s sugar
- Store in refrigerator
