Apple Cobbler

I found this recipe online and made it in college at Creighton, now my family requests it on Thanksgiving and other holidays.


Ingredients:

6Granny Smith or Golden Delicious apples, peeled and cut into chunks
1 cupApple juice
1/3 cupbrown sugar
1 tbspcornstarch
1 tbsplemon juice
1/2 tspvanilla extract
1 tspground cinnamon
1/2 tspground nutmeg
1/8 tspsalt

Batter:

1 cupall purpose flour
1 cupwhite sugar
2 tspbaking powder
1/4 tspsalt
3/4 cupmilk
5 tbspmelted butter
For toppingground cinnamon


Instructions:

  1. Preheat oven to 350 degrees
  2. In a large saucepan mix brown sugar, water, cornstarch, lemon juice, vanilla, cinnamon, nutmeg, and salt
  3. Stir in apples and cook over medium heat for five minutes, stirring occasionally
  4. Pour mixture into a lightly greased 9x13 pan
  5. In a large bowl, mix the flour, sugar, baking powder, and salt. Then mix in milk and melted butter
  6. Pour mixture over the apples in the pan and top with cinnamon
  7. Bake for 40 minutes or until. toothpick inserted into topping comes out clean
  8. Cool for 15 minutes
  9. Serve warm with vanilla ice cream
