Ah-ma’s Xifan -- Taiwanese Grandma’s Rice Porridge

This dish is special to me because my great grandma would make this dish when we visited her. This dish reminds me of my Ah-ma.


Ingredients:

8 cupswater or chicken, vegetable, or beef stock
3/4 cuplong grain rice
Optionalcelery, minced
Optionalchicken, shredded
Optionalgreen onion, minced
Optionalginger
1 tspsalt
To tastecilantro

Instructions:

  1. Cook the rice in your choice of liquid -- water, chicken, vegetable or beef stock -- until it is a thick porridge-like texture. You can cook the rice in a pot, instant pot, or crockpot.
  2. Add the salt, chicken and celery 10 minutes before the rice is done
  3. When the porridge is done, pour it into a bowl and serve. You can add green onions, cilantro, ginger, or even more chicken! Enjoy!
